sparkling blackberry mint refresher 

I have been so incredibly thirsty these past few weeks, I have begun referring fondly to this stage of my pregnancy as my “Thirsty Third” trimester.  I am constantly searching for new ways to meet my hydration needs without getting bored.  I love to use sparkling water to create “mocktails” and change things up.

I was blessed with a beautiful baby shower this weekend (pictures to follow), and Old City Hall in Bay City, MI, offered one of my favorite “mocktails” to our guests.  I tried to re-create it at home, and I think I got pretty close!  I am currently enjoying a few while watching the Bachelor on DVR.  They taste so good, I have to share!

Sparkling Blackberry Mint Refresher 
You will need: 
  1. 6-10 Fresh blackberries
  2. 1-2 Slices of cucumber, thin
  3. Lime Juice, splash
  4. 5-6 Fresh mint leaves
  5. Soda Water
  6. Ice
Recipe:
  1. Muddle the blackberries, mint, and cucumber at the bottom of a pint glass
  2. Once muddled, fill the glass part way with ice.
  3. Fill the glass with sparking water and finish with a splash of lime juice.
I believe that shaking the drink, while unnecessary because it doesn’t have gin, could make the drink blend even better.  Sometimes blackberries get stuck in the straw, so you could also strain the drink once mixed.  However, I like that the pieces of fruit make it easy to keep adding sparkling water to extend the drink.
